    Ingredients

    • 1/2 cup raw rice
    • 2 tbsp split yellow moong dal
    • 3 cups whole milk
    • 1 cup water
    • 3/4 cup powdered jaggery
    • 1/4 cup water for syrup
    • 4 tbsp ghee
    • 10 cashews
    • 1 tbsp raisins
    • 1/2 tsp cardamom
    • a pinch of salt

    Method

    1. Lightly toast moong dal. Rinse it with the rice and cook with milk and water in a heavy pot over gentle heat until completely soft, stirring often.
    2. Melt jaggery in the syrup water, strain and let it cool slightly.
    3. Mash the cooked rice, take it off the heat briefly and fold in the syrup. Return to very low heat and stir until creamy.
    4. Add 3 tbsp ghee, salt and cardamom. Fry cashews and raisins in the remaining ghee and pour on top.

Tips: Keep it soft and spoonable. A slow milk-based cook makes this different from ordinary sweet pongal.

Allergens: Contains milk, tree nuts (cashew).

Follow your cooker's instructions. Whistle counts and pot cooking times vary. Use food-grade edible camphor only, never ritual camphor. Check packaged asafoetida for wheat.

Cooking involves heat and common allergens (milk, tree nuts). Please cook safely.
