Ingredients

  • 1 cup raw rice
  • 2 cups water, adjusted for the rice
  • 2 tbsp oil
  • 1/2 tsp mustard
  • 1 tbsp chana dal
  • 1 tsp urad dal
  • 2 tbsp peanuts
  • 2 green chillies
  • 8 curry leaves
  • 1/4 tsp turmeric
  • 2 to 3 tbsp fresh lemon juice
  • salt to taste

Method

  1. Cook the rice until the grains are tender and separate, then cool slightly.
  2. Heat oil. Crackle mustard, fry dals and peanuts until golden, then add chillies, curry leaves and turmeric.
  3. Switch off the heat. Stir in lemon juice and salt, then gently mix with rice. Taste and add more lemon if needed.

Tips: Add lemon off the heat to keep its fresh flavour.

Allergens: Contains peanuts.

Follow your cooker's instructions. Whistle counts and pot cooking times vary. Use food-grade edible camphor only, never ritual camphor. Check packaged asafoetida for wheat.

Cooking involves heat and common allergens (milk, tree nuts). Please cook safely.
